Corn Dog Muffins
Ingredients
- Corn Muffin Mix like Jiffy
- 1/3 cup Milk
- 1 egg
- Hot Dogs
- Cream Cheese optional
- Chopped Jalapeno optional
Instructions
- Preheat oven to 400 Degrees
- Grease muffin pan
- Mix together milk, egg and cornbread mix
- Let batter rest for 3-4 minutes (batter may be lumpy)
- Chop a couple hot dogs into 1-2 inch chunks
- Stir again and pour into muffin pan making sure to fill cups 1/2 full
- Place a couple hot dog chunks into muffin cups
- Place 1 teaspoon of cream cheese and/or chopped jalapeno into each cup
- Bake in oven for 15-20 minutes
- Let cool
- Eat!
